Morigine - Fiano
Walking through our Fiano vineyard, in the Morigine district, is the most pleasant thing that can happen: this vineyard, in fact, has found its elective cradle in the generous soils of San Pancrazio and gives our family constant satisfaction. After the manual harvest, its aromatic generosity begins to explode already during fermentation, anticipating what will be a rich and fragrant olfactory set: tropical fruit, ripe citrus, wild herbs and yellow flowers. On the palate it is consistent and satisfying with a vibrant acidity that invites you to drink.

VINIFICATION:
Manual harvest at the end of August, gentle pressing and cooling of the must, soft and inert pressing, fermentation in steel at controlled temperature. Aging sur lies for about 3 months with weekly batonnage
ORGANOLEPTIC DESCRIPTION:
Straw yellow with greenish reflections. Delicate and elegant with an intensity of ripe lemon, yellow apple and pineapple. Fresh and dry on the palate with excellent persistence.
SERVING AND PAIRING: Serve chilled at 8-10°C. Perfect as an aperitif or paired with fish dishes, shellfish and salads.
Morigine - Negroamaro rosé
The sunset of Salento colors our rosé from the Morigine line, capable of powerfully enhancing the organoleptic characteristics of our main grape variety: Negroamaro.
Harvested strictly by hand, this grape offers all its aromas of small red fruits and pomegranate, embellished with balsamic hints and delicate floral scents. The sip is stubborn, but also smooth and fresh.
A wine that is hard to resist.

Cherry pink. Floral with hints of peach blossom and eucalyptus, delicately fruity with notes of cherry. Fresh and dry on the palate with excellent persistence.
SERVING AND PAIRING: Serve at 10-12°C. Extremely versatile, excellent as an aperitif or paired with structured fish dishes, salmon and grilled chicken
Morigine - Susumaniello rosé

ORGANOLEPTIC DESCRIPTION:
Pale cherry pink. Hints of fresh grass and wild flowers, decidedly fruity on the palate with notes of raspberry and wild blackberry. Fresh and dry on the palate with excellent persistence
SERVING AND PAIRING: Serve at 10-12°C.
Extremely versatile, excellent as an aperitif paired with blue cheeses or with bruschetta with fresh tomatoes
Morigine -Negroamaro / Primitivo
From the union between the austerity of Negroamaro and the body of Primitivo, our red Morigine is born: a straightforward and authentic wine, where the minimum passage in wood plays an elegant role, not at all covering. In fact, the dominant ones are the small and crunchy black fruits, the juicy cherry, all enriched by notes of Mediterranean scrub and hints of cloves. The sip, in line with its aromas, is rich and agile, with a fruity center of the mouth and young but balanced tannins.
A red wine of incredible versatility.

VINIFICATION:
Manual harvest at the end of September, gentle pressing and cooling of the must, fermentative maceration for 15 days, soft pressing, refinement in medium toasted wood for approximately 4 months
ORGANOLEPTIC DESCRIPTION:
Intense ruby red. Hints of ripe red fruits such as currant and blackberry with a delicate Mediterranean spice. Balanced and persistent on the palate with excellent softness and tannicity
SERVING AND PAIRING: Serve at 16°C. Extremely versatile, excellent with traditional Mediterranean first courses such as orecchiette with turnip tops or veal ragù or with meat-based second courses.
Passo del Moro - Negroamaro Selection
With this bottle our family wanted to celebrate Negroamaro, selecting the best company grapes and working them as a great red wine deserves. The wood aging refines the aromas of this varietal, blends the drink and makes the tannin of rare finesse. On the nose the red fruits become more mature, without ever losing integrity, and the tertiary notes generously amplify the bouquet. The sip is voluminous but balanced, thanks to the notable freshness and the chiseled tannin.
A decidedly “important” wine.

VINIFICATION:
Manual harvest in crates in the first ten days of October, delicate pressing and cooling of the must, fermentative maceration for 20 days, soft pressing, refinement in medium toasted wood for approximately 12 months and a further 12 months in the bottle
ORGANOLEPTIC DESCRIPTION:
Intense ruby red. Hints of ripe red fruits such as currant and blackberry with a marked spiciness of Mediterranean scrub. Balanced and persistent on the palate with excellent softness and tannicity
SERVING AND PAIRING: Serve at 18°C. It is a wine with great structure and complexity of taste and aroma. With a marked spiciness. Excellent with roasted red meats. It is able to evolve considerably up to 4-6 years.
