Torre del Cardo - Primitivo Selection
Torre del Cardo - Primitivo Selection
"Far removed from the stereotypes of cloying opulence, Torre del Cardo redefines Primitivo with a complex, fresh and nuanced nose. It comes from a bush-trained vineyard over 60 years old, with minimal yields and grapes picked by hand, one by one. A signature wine that celebrates the nobility of our terroir"
Designation : Primitivo IGT Salento
Vintage : 2021
Grape variety : Primitivo
Format : 0.75 l
Alcohol : 15%
Serving temperature : 16 - 20°C
Tasting notes : Deep ruby in color with violet hues in younger vintages; it tends toward garnet as it ages. Clear and well-structured, with dense, persistent legs. The nose is broad and varied, dominated by notes of ripe red fruit—plum, black cherry and blackberry—often in jammy form. These are followed by the grape’s typical spicy aromas, such as black pepper and licorice, complemented by vanilla, sweet tobacco and cocoa in oak-aged versions. On the palate, it is soft and enveloping, supported by good alcohol content and substantial structure. The tannins are ripe and well integrated, with moderate acidity that is sufficient to ensure balance. The palate is full, with excellent aromatic concentration and a long finish, showing notes of dark fruit and spices
Pairing : An ideal match for rich, flavorful dishes: roasted or braised red meats, game stews, casseroles and traditional Mediterranean dishes such as lasagna or hearty ragù. It also pairs beautifully with aged hard cheeses. Its softness and warming alcohol enhance succulent dishes, while its aromatic intensity complements complex, spicy flavors. Also perfect with modern dishes such as gourmet burgers, pulled pork and mixed grills
Aging : 12 months in medium-toast oak, followed by a further 12 months in bottle
